Tonno Arrostite con Broccoli Raab

(Roasted Tuna & Broccoli Raab)


1 Med. Onion - white - chopped fine
3 Cloves  Garlic - sliced thinly
2 Med. Tomatoes - plum; chopped into 1/4 in. pieces
1 Slice Pancetta - chopped fine
3 Cups Broccoli Raab - Stems removed & chopped coarsely
2 Cups  Chicken stock
1/2 Cup Bread Crumbs
1/4 Cup Olive oil - extra virgin
1 Lb. Tuna steak - from Tonno Arrostiti Con Pepe Nero recipe
Q.B.      Salt and Pepper


Saute the onion for 3-4 minutes then add the garlic and cook for another minute. Add the pancetta, and cook for 2-3 minutes, then add the tomato and cook for 5 minutes more, stirring occasionally.  

Add the broccoli raab  to the pan and mix thoroughly. Cook for 8-10 until the broccoli raab is wilted, and all ingredients are incorporated into the mixture.  

Meanwhile cut the tuna steak into 1/2 to 3/4 inch pieces.  As soon as the raab is ready add the tuna to the pan and cook for a few minutes over medium high heat.  At the end of this time, add the chicken stock. stir well and cook an additional 10 minutes or until the liquid is reduced by about half.  When that happens, add the bread crumbs and stir  for a few seconds.  Serve immediately.
