Sugo di Pomodori Freschi e Funghi Portobello - Semplice e Rapido
(Fresh Tomato and Mushroom Sauce - Simple and Quick)
12 Large Italian Plum tomatoes - fresh - chopped coarsely 3 Medium Portobello Mushrooms - chopped coarsely 3 Cloves Garlic - sliced thinly 4 Tbl. Olive oil - Extra virgin Q.B. Salt and Pepper
Place all of the ingredients in a 2 quart saucepan. cook over medium-high heat for 5 minutes, stirring constantly. Reduce the heat to medium and cook an addional 10 minutes. Note that no additional water is necessary.
Meanwhile heat a pot of water for the pasta. Cook the pasta al dente - any pasta will do as long as it is of good quality.
About 1-2 minutes before th pasta is cooked, turn the heat on for the sauce. As soon as the pasta is ready, drain it, and then sauce it. Serve Immediately. either grated or shaved Parmesan or Pecorino Pepate may be served as a condiment.
