Salsicce e Rape con Peperoni
(Sausage, Turnips and Green Chili Peppers)
4 Sausage - Chicken or Turkey 4 Lg. Turnips - Rape in Italian 6 Lg. Chiles - green & mild 3 Cloves Garlic - chopped 1/2 Cup Olive oil - extra virgin 1/2 Tsp. Pepperoncino - optional
Sauté the garlic in the olive oil until they have softened, about 1-2 minutes. Cut the Turnips/Rape into 1/2 inch dice. Add them to the pan and continue cooking for about 5 minutes. Cut each sausage into 4 pieces, then add them to the garlic and turnip mixture.. Sauté on medium heat for 4-5 minutes, mixing every minute or so. Quarter the peppers, and de-seed them. Add them to the sausage, salt and pepper to taste and cook everything together for another 15 minutes.
If desired, add 1/2 cup red wine about 5 minutes before the end of the cooking time, turn the heat to medium high and allow the wine to evaporate.
