Salmone al Forno di Legno

(Salmon Cooked in the Wood Fired Oven)


2 1/2 Lb. Pieces of wild Salmon - (skin on)
3 - 5 Cloves Garlic - chopped
1/4 Cup Olive Oil
1/5 Cup Mixed fresh herbs - rosemary and thyme
Q.B.   Pepper - Black
Q.B.   Salt

Preparation of the Dish

NOTE: This recipe is best used when the wood fired oven is being fired for pizza (750-800).  During that process, push some of the wood and coals to the rear of the oven, but leave a thin layer under where a rack will be placed.  Cook the salmon on the rack as described below.

Cut four pieces of aluminum foil, each large enough to wrap one salmon piece.  Put a couple of teaspoons of olive oil on each of two pieces of foil.  add a teaspoon of garlic , and some of the herbs to the oil on the foil.   Place a piece of salmon on an oiled piece of oil.  Pour oil over each piece of fish, then garlic, then herbs, and finally salt and pepper to taste.

Wrap each piece with the foil, making a nice packet.  Place the packet on another piece of foil, and wrap the entire thing as leak proof as possible.  Once this is done, place each packet on the rack in the oven, and cook for 3-5 minutes, depending upon how thick the fish piece is.  Turn the fish over and cook for another 3-5 minutes.  Remove from the oven, and let sit for a minute.  Unwrap, and check for doneness. If they are done to your liking, eat!

If you are going to make pizza, rake the coals from the back of the oven, and cover the floor of the oven again, add more wood and continue the firing until 700-750 F is reached.
