Pollo con Peperoni 

(Chicken with Roasted Peppers)


1 Lg. Chicken - cut into 6 pieces
12 Lg. Peppers - Long Italian (or Hungarian) green peppers
4 Cloves Garlic - chopped coarsely
1/2 Cup + 2 Tbl. Olive Oil - Extra Virgin
Q. B.      Salt and pepper

Preparation Of the Dish 

Cut the peppers into 1/2 inch strips, removing the tops and seeds first.  Marinate the pepper pieces in the olive oil and garlic for at least 2 hours.

While the peppers are marinating,  fry the chicken pieces with only  salt and pepper as spices. Cook them until they are golden brown - about 5 minutes on each side. Remove from the pan set aside. 

After the peppers have marinated, put them into a large frying pan and cook them over medium heat until they are wilted.  Turn them every 10 minutes or so.  They should be properly cooked in an hour.  At the end of this time add the chicken to the pan, and mix well.  Cook the chicken and peppers together for another20 minutes or until the juice from a chicken piece pierced with a fork runs clear. 

Serve immediately.  We have found that the best accompaniment for this dish is a loaf of country Italian bread such as Pane Pugliese.

NOTE: A sliced medium sized white onion added to the peppers while they are frying adds another flavor to this dish.  Try it!
