Pesce al Forno di Legno

(Fish baked in a wood Fired Oven)


Lb. Rock cod fillets
1 Lb. Petrale sole
1 Lb. Thresher shark
8 Leaves Radicchio di Treviso (or round head radicchio)
Q.B.    Salt & Pepper
1 Med. Lemon
1/8 Cup Olive Oil - Extra virgin

Preparing the Dish

Fire the wood burning oven until the temperature reaches 600-650F.

Meanwhile marinate the fish in a mixture of olive oil, orange halves, rosemary  and thyme for 45 minutes.  Remove from the marinade and pat dry. Arrange the rock cod and the thresher shark at opposite ends of a n oiled 12 x 15 inch stainless steel casserole or lasagna pan.  

Dip the radicchio leaves in boiling water for 1-2 minutes.  Cool them.  cut the petrale sole into 8 pieces. Wrap each piece in a radicchio leaf.  Place these packets in the center of the  stainless steel pan between the shark and the cod.  

Sprinkle  the fish with salt and pepper and a bit more olive oil.  Squeeze the juice from one lemon over all of the fish.

Cover the pan with a sheet of aluminum foil.  Put into the oven and bake for 20-25 minutes.

Remove from the oven and carefully take the foil off of the pan. 

Serve immediately,
