Peperoni Ripiene con Ripiene di Tacchino

(Peppers Stuffed with Turkey Stuffing)


3 Cups Turkey Stuffing [Click here for Stuffing Recipe]
6 Slices Mortadella - Chopped into small pieces
1 Lg. Egg
2/3 Cup Bread Crumbs
4 Med. Peppers - Either Green or Red Bells or Passilla
4 Tbl. Extra Virgin Olive Oil


Mix the Stuffing with the  mortadella, the bread crumbs  and the egg until all ingredients are thoroughly amalgamated.  Add 1/4 cup of water, mix again and let sit for 10-15 minutes.

Cut the tops off of the peppers (save them), remove the seeds, rinse and salt the insides of the pepper lightly. 

Stuff each peppe with the stuffing and place a pepper top on each pepper.  Put ther peppers in a small casserole pan, sprinkle with olive oil and bake at 350 for 40 minutes.   Serve hot.

Left overs are good served at room temperature.  Cut a pepper in half, sprinkle with olive oil and serve with bruschetta.
