Penne con Purea di Fave
(Penne Pasta with Fava Bean Puree)
Fava Bean Puree
1 1/2 Cups Fava Beans - shelled, blanched and peeled 2 Cloves Garlic - peeled and diced 1/2 Cup Olive Oil - Extra virgin 1 Tbl. Balsamic Vinegar Sauce 3 Lg. Tomatoes - chopped 1/2 Cup Goat cheese 1/2 Cup Extra virgin olive oil 1/2 Cup Fava Beans - shelled, blanched and peeled 1/2 Lb. Penne pasta Q.B. Salt and Pepper to taste Q.B.
Preparation of the Puree
Add the one and a half cups of fava beans to a blender or food processor, then add the garlic, and olive oil. Process on high for a minute or so, until, all of the ingredients have formed a thick but liquid puree. Add the balsamic vinegar, and if necessary a bit of either olive oil or water to obtain the necessary consistency. Set aside.
Preparation of the Sauce
Put up a pot of water for the pasta.
Put the chopped tomatoes, cheese and whole fava beans in to a bowl. Add the olive oil, a quarter cup of water and mix gently to amalgamate the ingredients and coat everything with the goat cheese.
As soon as the pasta is cooked al dente drain it, then return it to the pot, add a little olive oil, salt and plenty of pepper, and heat it over a brisk heat for a minute, while stirring vigorously. Add the tomatoes, goat cheese and whole fava mixture, and mix well for 5-10 seconds. Serve immediately, garnishes with shaved Parmesan cheese.
