Pasta con Zucchini, Cipolla e Prosciutto con Purea di Fave

(Zucchini, Onions and Prosciutto Pasta Topped with Fava Puree)

Ingredients

1/2 Cup Onion - red, cut into small pieces
1 Med. Zucchini - peeled and cut into 1/2 - 3/4 in. pieces
1/2 Cup  Olive oil - Extra virgin
3 Cloves Garlic - chopped finely
2 Cups Tomatoes - either canned or fresh, and diced
1/2 Cup Prosciutto - chopped very fine
1/2 Lb. Pasta - Rigatoni or Penne
Q.B.     Salt and Pepper to taste
4 Tbl. Fava Puree (See recipe)
1/4 Cup Parmesan cheese - freshly grated

Preparation

Put a pot of water to boil for the pasta.

Fry  the zucchini and onions in olive oil over high heat for 2-3 minutes, stirring constantly.  Add the garlic, turn the heat to medium and fry an additional 1-2 minutes. Add the prosciutto and the tomatoes.  Add salt and pepper to taste.  Cook for 5 minutes over medium heat.  Turn off the heat.

Cook the pasta until is is quite al dente. Take a ladleful of the pasta water and add it to the sauce.  Stir.  Add the pasta to the sauce and cook over high heat for 1 minute, stirring all the while.

Immediately serve the pasta in heated bowls.  Top the pasta with 1-2 tablespoons of the Fava Puree and a generous sprinkle of Parmesan cheese.
