Pasta Facile e Presto
(Quick & Easy Pasta)
This pasta dish is the result of preparing the pasta for another recipe - Peperoni Ripiene con Pasta. We cooked more than we needed to stuff the peppers, and made a quick pasta for dinner that night. It turned out to be one of the best pastas we have ever made.
1/2 Lb. Pasta - Penette or other smaller pasta 1 Cup Tomatoes - diced: either fresh or canned 2 Tsp. Garlic - Chopped (more if you love garlic) 1/4 Cup Olive oil - extra virgin 1/4 Cup Cheese - freshly grated Parmesan or Pecorino Pepate. (Optional)
Chop the garlic into very small pieces. Set aside.
Cook the pasta al dente. Drain and return to the pot from whence it came.
Add the garlic, tomatoes and olive oil to the pot. Turn the heat to high and stir fairly vigorously while reheating the pasta. Heat for 1 minute. Serve immediately with or without the Parmesan or Pecorino Pepate cheese.
