Pasta con Fiore di Zucchini e Purea di Fave

(Pasta with Zucchini Flowers and  Fava Puree)


20- 30 Lg. Zucchini flowers - cut into strips
1 Clove Garlic - chopped
6 Pods Fava beans - shelled but not peeled
3 Tbl. Olive oil - Extra virgin
Q.B.     Salt and Pepper to taste
1/2 Cup Chicken broth or stock
1/2 Lb. Pasta - spaghetti
4 Tbl. Fava Puree (See recipe)
1/4 Cup Parmesan cheese - freshly grated


Put a pot of water to boil for the pasta.

Saute  the zucchini flowers and the garlic in the olive oil. Add the fava beans, turn the heat to medium high and cook for 1-2 minutes or until the beans soften and the outer skin cracks.  Add salt and pepper to taste.  Add the white wine and deglaze the pan.  Cook until the wine has evaporated then add the chicken stock.  Cook this over vigorous heat for 5 minutes. Turn off the heat.

Cook the pasta until is is quite al dente.   Add the pasta to the sauce and cook over high heat for 1 minute, stirring all the while.

Serve the pasta in heated bowls.  Top the pasta with 1-2 tablespoons of the Fava Puree , stir to incorporate the puree into the pasta and then sprinkle Parmesan cheese over the dish.
