Pasta con Brandade di Melanzane e Baccala

(Pasta with Eggplant and Baccala Brandade)


1/2 Cup Chicken broth
1/2 Cup Eggplant brandade [Click for recipe]
3 Tbl Chopped fresh onion
1/2 Lb. Pasta -  rigatoni or shells
1/2 Cup Parmesan cheese - freshly grated


Put a pot of water to boil for the pasta.

As soon as the pasta is cooked and drained, add it to the Eggplant brandade, the chopped green onions, and the chicken broth.  Cook over high heat for 2 minutes, mixing thoroughly.

Serve immediately with a  generous portion of freshly grated Parmesan cheese.
