Fritatta con Ripieno di Tacchino
Open Faced Omelet Made with Turkey Stuffing)
1 1/2 Cups Turkey Stuffing - [Click here for the Stuffing Recipe] 2 Lg. Eggs - yolks and whites 5 Lg. Eggs - Whites only 2 Tbl. Parsley - chopped coarsely 2 Tbl Extra virgin olive oil
Put the turkey stuffing in to a mixing bowl, and bread the 2 whole eggs into it. Mix thoroughly. Oil a stick proof frying pan. Turn the heat to medium. Make a large patty out of the turkey, and place it in the fry pan. Cook for about 3 -4 minutes or until browned on one side, turn it over and cook until browned.
Meanwhile, beat the egg whites with a tablespoon of water or milk. Add the parsley and beat again. Add the egg whites to the pan with the turkey patty. Cover the pan and cook over medium heat for 3-4 minutes.
Oil a large platter. When the eggs have solidified, turn the fritatta onto the oiled plate, then slide it back into the pan to cook the other side. Cooking the other side should take 2-3 minutes. When cooked, slide the fritatta onto a plate, sprinkle with olive oil and salt and pepper to taste. Serve hot, warm or cold. The fritatta may also be served as an ingredient in a sandwich. A nice sandwich can be made by melting a slice of Fontina cheese over the Fritatta after it has been placed on piece of crusty Italian Bread.
