Coniglio Arrostito con Pomodori arrostiti

(Roasted Rabbit with Roasted Tomatoes)


1 Lg. Rabbit - cut into 6 pieces
3 Lg. Tomatoes - oven roasted & quartered  --  [See Recipe]
6 Sprigs  Oregano - fresh or 1 Tablespoon dry
6 Sprigs  Sage - fresh or 1 Tablespoon dry
3 Sprigs  thyme - fresh or 1/2 Tablespoon dry
4 Cloves Garlic - chopped coarsely
1/2 Cup + 2 Tbl. Olive Oil - Extra Virgin
Q. B.      Salt and pepper


Put  the rabbit pieces into a bowl, then the olive oil, tomatoes, herbs,  garlic, salt and pepper. Mix thoroughly and leave to marinate for at least 1 hour. 

At the end of this time, place the rabbit in a roasting pan and roast for 1 hr at 400 F. 

Serve immediately, either alone or with a light salad such as a tomato and onion salad.
