Coniglio con i Fighi

(Rabbit with Figs)


1 Lg. Rabbit - cut into 8 pieces
12 Med. Figs - white - cut in half
2 Cups Chicken broth
1 Cup White wine
Q. B.   Salt and Pepper
Q. B.    Olive oil - extra virgin (Q.B. = Quanto Basta = as much as is needed or desired
This recipe is the best and easiest recipe that we have developed in 2003.  Even folks who  not enjoy rabbit, may change into rabid rabbit aficionados.


Place the figs in a large shallow saucepan (saucier), and add the chicken broth, wine, salt and pepper.  Simmer for 5 minutes.

Add the cut up rabbit, stir to amalgamate all the ingredients.  Cover the pan and simmer for 1.5 hours.  At the end of this time, remove the cover and allow the sauce to thicken.  When the sauce has reached the consistency of maple syrup, remove from the heat and serve immediately.
