Calamari Ripieni con Mais
(Calamari - Squid - Stuffed with Corn)
6 Large Calamari Squid - cleaned 2 Cups Corn kernels 1 Cup Parsley - chopped 1 Lg. Egg - white only 1 Cup Bread crumbs 1/2 Med Onion- red & chopped finely 1/4 Cup Olive Oil - Extra virgin
Preparing the Dish
Preheat the oven to 375° F.
Put everything except the calamari 1/ 2 cup of the chopped parsley into a large mixing bowl. Mix well, and leave for 10 minutes so that the bread crumbs may hydrate. If the mixture is too dry add 1/4 cup of water and mix again.. Put the mixture into a large zip-lick bag. Cut one corner off of the bag. This makes a convenient, disposable stuffing instrument. Stuff each squid, leaving room for the stuffing to expand during baking.
Coat the bottom of an oven proof casserole with olive oil. Place the stuffed calamari in the pan, adding any extra stuffing to the pan. Sprinkle with a bit more olive oil and bake at 375 for 35-40 minutes.
Serve immediately, garnished with freshly chopped parsely.
