CROSTINI CON SALMONE AFFUMATO
(Crostini With Smoked Salmon & Capers)
6 Slices Smoked Salmon 1/4 Cup Mayonnaise 2 Tsp. Capers in vinegar 2 Tbl. Extra virgin Olive oil 1/2 Tsp. Black pepper, freshly ground 1 Tsp. Lemon or lime juice 4 Slices Italian Bread 1 Med. Tomato - optional
PREPARATION OF THE CROSTINI
Put the salmon in mini-blender or food processor. Add the mayonnaise, the olive oil, the capers and the black pepper. Blend on high until all ingredients are well mixed and chopped very fine. Add the lemon or lime juice and blend again for 10 seconds. Remove from the machine and place covered in the refrigerator.
Toast the bread on both sides in a 475 degree oven or under the broiler. Brush olive oil in the toast. Heap the salmon mixture on the toast and serve.
When fresh tomatoes are available, top the salmon mixture with thin tomato slices, and cook under the broiler for 2-4 minutes. Top with a thin drizzle of olive oil, and serve.
