Rotelle con Le Fave e Scarole

(Rotelle with Fava and Escarole)


3 Sm. Escarole - or one large one
1 1/2 Cups Fava Beans - Fresh: cooked, firm Canellini beans can be used also
1 Cup Tomatoes
1/2 Cup Chicken stock
1/4 Tsp. Pepperoncini flakes - optional
1/2 Lb. Pasta - Rotelle
1/2 Cup Extra Virgin Olive Oil


Clean and chop the escarole into pieces about 1 inch square.  Put them into a large skillet or wok, and add the olive oil.  Saute the escarole until it is wilted, then add the Fave beans (or the Canellini).  Sauté for an additional 3-4 minutes.   Add the chicken stock, and the pepperoncini if using them, and bring back to a boil.  Add the tomatoes and stil well.  Turn up the heat and cook vigorously for 5 minutes, or until the sauce has thickened.  Once this happens, tur  n off the heat and cover the pan.  Set aside while the pasta cooks.

Cook the rotelle in plenty of salted water until very al dente.  Drain and add them to the pan with the sauce.  Cook over high heat while stirring for 1-2 minutes.   Serve in bowls.  Garnish with either shaved Parmesan or Pecorino Pepate cheese.
