Orzo con Zucchini e Salame
(Orzo with Zucchini and Salami)
Ingredients
3 Small Zucchini 2 Cloves Garlic - chopped 1/4 Cup Salami - minced 1/4 Cup Olive oil - Extra Virgin 1/2 Cup Parmesan cheese - freshly grated 1/4 Cup Broth - chicken or Vegetable 1/2 Lb. Orzo Pasta Preparing the Dish
Quarter the zucchini lengthwise. Cut all spears into small pieces - about 1/2 inch in size - as uniformly as possible.
As noted above, dice the salami. One easy way is to cut two or three 1/8 " slices from a good Italian salami, then dice the slices.
Add about 4 tablespoons of olive oil to a fry pan. Sauté the garlic in the oil for about 30 seconds on medium heat. add the zucchini, then the salami. Sauté these ingredients for about 10-12 minutes until the zucchini just begins to brown, stirring at regular intervals. Turn off the heat.
Cook the pasta in plenty of salted water until it is al dente. Drain, add a couple of tablespoons of olive oil, then the quarter cup of broth. Stir. Add the zucchini mixture and most of the Parmesan cheese to the pot, but Reserve 4-5 tablespoons. Stir vigorously over medium heat for about 10-15 seconds.
Serve immediately garnished with the rest of the freshly grated Parmesan cheese.
Pinot Noir goes well with this dish, as would an aged Sangiovese wine.
