FARFALLE e ZUCCHINE al FORNO
(Oven Roasted Farfalle Pasta and Zucchini)
6 Sm. Zucchini - cut on the bias into rounds 1/2 Lb. Farfalle pasta 3 Cloves Garlic, chopped 3 Tbl Parmesan cheese - freshly grated 3 Tbl. Goat cheese - crumbled 3 Tbl. Pecorino - freshly grated 1 Lg. Tomato - chopped 1/4 Cup Olive oil
Preparing the Dish
Roast the zucchini in half the olive oil in a 400 degree F oven until they begin to brown and caramelize. Remove from the oven and allow to cool a bit.
Cook the Farfalle in a large pot of salted boiling water. Cook them until very al dente. Remove the pasta, drain.
Mix all of the cheeses together and place in a bowl large enough to hold all of the ingredients. Add the zucchini, and the Farfalle to the bowl, along with the tomato. Add the remaining olive oil and a quarter cup of water. Mix well, and place in a baking pan.
Bake for 30 minutes in a 400 degree F. oven. Serve.
